When Hayley said she wanted to try grilling pizza I have to admit I didn't really see the draw... perhaps it's some sort of carnal grill=meat instinct or something. Anyway, now that we've worked out the kinks, I am borderline obsessed with the technique and more importantly the results! We've learned some tricks along the way and decided a slideshow would be the best way to illustrate the process. brie, apple & arugula pizza
- Remove the rind from regular brie cheese, slice, and put directly on grilled dough.
- Once it melts sprinkle rosemary (dried works well and I'm sure fresh is even better).
- ~1 minute before the pizza is done place a generous heap of arugula onto the cheese.
- Drizzle with extra virgin olive oil and balsamic vinegar.
- Top with julienned apple (something tart like a granny smith). Toss apple with lemon juice if cutting ahead of time to prevent browning.
